I am continually amazed by this simple little cookbook, Quick-Fix Vegetarian by Robin Robertson. I have made some of my best meals (or so I'm told, he he) from Robertson's larger Vegan Planet, but Quick-Fix also has some great recipes that come together really quickly. Tonight I made Cream of Pumpkin soup, which uses canned pumpkin puree, coconut milk and curry powder. I started with the recipe, and added an extra teaspoon of red curry powder. It tastes rather spectacular for being thrown together from cans in the cupboard.

Best cookbook evar..
